सामग्री:

आलू – 3 मध्यम (छिले और कटे हुए)

ताज़ी मेथी – 1 कटोरी (धोकर बारीक कटी)

तेल – 2 टेबलस्पून

जीरा – ½ छोटी चम्मच

हींग – एक चुटकी

हल्दी – ½ छोटी चम्मच

लाल मिर्च पाउडर – स्वाद अनुसार

धनिया पाउडर – 1 छोटी चम्मच

अमचूर / नींबू रस – स्वाद अनुसार

नमक – स्वाद अनुसार

कढ़ाही में तेल गरम करें।

तेल गरम होने पर जीरा और हींग डालें।

अब कटे हुए आलू डालकर मध्यम आंच पर 5–7 मिनट भूनें।

हल्दी, लाल मिर्च, धनिया पाउडर और नमक डालकर अच्छे से मिलाएँ।

ढककर आलू लगभग गलने तक पकाएँ (ज़रूरत हो तो थोड़ा पानी छिड़क सकते हैं)।

अब कटी हुई मेथी डालें और अच्छी तरह मिलाएँ।

5–7 मिनट खुली कढ़ाही में पकाएँ ताकि मेथी कच्ची न रहे।

अंत में अमचूर या नींबू रस डालकर मिलाएँ।


गरम-गरम आलू मेथी की सब्ज़ी रोटी या पराठे के साथ परोसें 😋
